Recipe of Marmitako de Tuna
The Tuna marmitako is a recipe from the Basque Country , Spain. It is based on fish (tuna or bonito), potatoes, bread and peppers. It's too easy to make and it tastes amazing .
It originates from the maritime ports of the Cantabrian Sea, north of the Iberian Peninsula. The fishermen on the mainland, and in the sea, took advantage of the leftovers of fish to make food. They put some onions, peppers, enough potatoes and in many cases pieces of bread saved from the previous day, to have enough energy, in the form of carbohydrates, during their work.
It is a unique meal, quite powerful and full of calories so, in theory, with a good dish you will be full, happy and energized for the rest of the day.
This fish stew and potatoes were prepared in a pot called " marmita em>", hence the name marmitako.
Like all traditional dishes of villages, each region, each family, each boat, had your own version of this recipe. Some with peppers, others with tomato, others without potatoes, or without bread ... And always with leftover fish, usually tuna.
There are even versions of marmikato that include chorizo which, if you ask me, seems invasive .
In addition to this famous dish made with tuna, you can also get marmitako of cod, marmitako of squid, marmitako of hake and even salmon marmitako. I, personally, keep the recipe for this post 🙂
This marmitako recipe for tuna that I will explain to you was made at home a long time ago, it is very easy to prepare and you can always add/remove ingredients to personalize it.
For example: you can use chorizo peppers in addition to the traditional ones. You can also chop a piece of leek, sauté it in oil for a few minutes and pour it into the stew.

How to prepare tuna marmitako easy
Ingredients (3 people)
- 1/2 kg of fresh tuna
- 1/2 kg of potatoes
- 1 large onion
- 1/2 red pepper
- 2 cloves of garlic
- 2 peeled tomatoes
- A handful of green peas
- A piece of bread (if it's homemade bread, better)
- Salt
Preparation:
Chop the tuna, the onion, the pepper and potatoes (previously peeled) in medium-sized cubes. The tomato and garlic picante very small.
In a deep pot you will add a generous stream of olive oil and sauté the onion and garlic until golden brown.
Then add the potatoes and stir for about 3 minutes.
Then you put the pepper, and the tomato, a pinch of salt, you give it 3 times and add enough water to cover the potatoes completely.
Let boil about 15 minutes or until the potato is ready. Add more salt to this broth if necessary.
After this time incorporate the pieces of tuna and peas. Lower the heat and let cook for 10 more minutes.
Finally, it chops bread into several pieces the same size as fish and potatoes and, depending on how much broth have your marmitako of tuna, you add more or less amount of bread.Long live the tuna marmitako! Long live Basque food!
